What if I have a toxic person in my life that I can’t distance myself from and they continually stress me out to the point that I can’t remember things to be grateful for when it comes time to write them down? Thanks for your time! :)

I think that it’s always better to distance yourself from that person. If someone keeps you from being grateful then that person is probably not meant to be a part of your life. Being grateful is essential for every single human being and someone who is meant to be for you will encourage you to be grateful.

Ask yourself why and when they make you feel that way and try set some boundaries. If you’re true to yourself you have already one thing to be grateful!
