I really like mini breakfast quiches. I make then ahead and they are perfect to have hot or cold. I use eggs, bacon, Spinach, zucchini and cheese but you can put it whatever you want. Season to your liking and put it in muffin trays. Cook at 180°C for 15 minutes and store in the fridge. I find these have plenty of protein and energy to fuel my brain and my body. If I have more time, I'll also make a berry and banana smoothie for an extra energy boost and more nutrients
