I think whatever you can handle is great. If thinking you need to do it twice makes you think you might sometimes fail, make sure your bare minimum is once but twice is a good goal.

Maybe floss a second time each day every other day for a while (the opposite end of the day you normally floss, eg morning if you currently floss at night), and take note of how much food and plaque residue you're clearing.

If there's none than you can continue with one time, but if there's not than you like than you can up it to twice daily.
