You could try a slice of whole wheat toast with hummus (for protein and vitamin B), try adding sliced tomatoes or arugula on top. A whole or half apple with peanut butter on the side would also provide protein and good nutrients!
Have you tried, granola and yogurt. My parents always had a box of home made granola on hand for fast breakfasts. I don’t remember the exact recipe, but it consisted mainly of their favorite types of nuts that they baked themselves. Whenever we were running late but needed to eat we would poor it over a cup of yogurt and fruit.
