I love smashed avocado on whole grain toast with a bit of salt and pepper. You can buy a box of Wholly Guacamole brand single serving containers of smashed avocado and one of them covers two pieces of toast. (They also keep better/longer than whole fresh avocados.) Of course you can garnish avocado toast with different things to change it up. Tomatoes or salsa, fresh spinach, peppers or whatever you can imagine.
