I’ve made egg bites by scrambling eggs, spinach, and cheese and putting into a muffin tin before baking. Once they’re done, you can just store them in the fridge as an easy option for another day. Sometimes, I’ll make lil’ smokies and cabbage. You cook the smokies and cabbage in a pan on the stove until the cabbage is tender and the smokies are hot. I like to use purple cabbage for the fun color. (It helps to put a little water in the pan with the cabbage.) I’ve also made chia pudding with coconut milk, cinnamon, honey, and chia seeds. It’s really easy and keeps in the fridge for over a week.
