I’m not vegan, but my breakfast is more often than not free from animal products. Lately I enjoy overnight chia pudding with oats, chopped nuts, honey and cinnamon. Sometimes instead of the honey and cinnamon I opt for cocoa powder and chocolate chunks or chopped seasonal fruits with whatever spice or sweetener fits with the taste. Sometimes dates are nice too, or any kind of dried fruit really. In my opinion the right nuts are one of the most important ingredient and I base the recipe around that choice. I like to experiment a lot so I don’t get it right every time, but when I do….. ooooooohhhhhh what a beginning of the day that is!
