I love to cook and love variety, but always skipped breakfast until trimmed complexity with a list of 4 super fast healthy meals that I eat in rotation: microwaved oatmeal with fruit and nut butter, low-fat cottage cheese with berries and ground seeds mix, microwaved egg on toast with lots tabasco, green smoothies batch-prepped on day off (eg today – 16oz arugula, 2 pears, 1/2C walnut). On days food just doesn’t appeal at all, plain unsweetened kefir is always doable. Fav go to weekend morning meal is spicy cauliflower egg bhurji. To keep from getting bored, a good granola in the cupboard and protein-enhanced toaster waffles in the freezer is handy.
