Since my breakfast prep is usually limited, I have two go-to options that barely take any time, but you can get creative with them. The first one – overnight oats. I keep it simple by pouring oat milk over my oats and leave them in the fridge overnight, then add various fruits and nuts in the morning (my favourite are blueberries). The second option – rice cakes and humus. Again, takes barely any time, and I like to add seasonal veggies to this combo, usually tomatoes, cucumbers, or bell peppers. Really, the only limit to both of these is our imagination, so I hope you have fun with it!
