How do I force myself to disconnect from a mentality of having my devices open to check on email or do ‘productive’ things for work?

First of all, do not force yourself. I guess trying to convince yourself and your brain would be better and more efficient.
Tell yourself you’re doing this because of your health; both physical and mental.

Secondly, have times for yourself in which you don’t use any electronic devices: walking, reading, drawing, writing, cooking, even just staring at the sky wondering.
This way, you disconnect from the electronic world and you reconnect with your interior world, getting to know yourself better.

As an example, try to stop using electronic devices an hour before going to bed, and use that time to do other things.
