What do you do if you skip a couple of days of meditating due to a busy schedule ? Is it ok to just get back into when I can ?

It’s always okay to skip a couple of days of meditation, it should never make you more stressed. But if this doesn’t feel right to you you can also take a mindful moment in other ways. For example by closing your eyes and taking a couple of deep breaths, or by noticing the present when you are walking/cycling/driving somewhere.
