I never ate breakfast – I wasn’t hungry, I was always running late, breakfast food didn’t agree with my stomach. But relentless health advice about the importance of breakfast just kept piling up and I finally gave it serious effort. After experimenting with different foods, I finally settled on a hard-boiled egg and peanut butter toast. If I sat down and ate mindfully, it stayed down and I felt more energized in the afternoons (less post-lunch slumps). “Mindfully” means really chewing and finishing bites before shoveling in the next bite. Of course, this means having the eggs cooked and waiting, and having those few minutes to sit and eat. It doesn’t always happen. Sometimes there’s just enough time to eat the egg in two big bites, no toast. But it’s about progress, not perfection.
