When I wake up later in the morning I usually just eat a piece of fruit and a handful of nuts or just a large glass of orange juice. Does this still count as breakfast?

It is. I almost never have time in the morning to have breakfast but eating is really important to feel energized especially in the mornings. Even a piece of fruit can make you feel with more energy for the day. Something I do that I recommend is to make overnight oats. They save so much time and they always make me feel really good and it is delicious especially if you add toppings like almond butter and apples.
