I like to have a brunch occasionally. Melt a little oil or butter with a little water in a small fryinf pan, low heat. Ig not vegan/ vegetarian Add an egg or small piece of white fish which will cook in less than 2 to 3 mins. If vegan add a mix of mushrooms, and maybe tomatoes. Whichever choice, add fresh chopped parsley; basil, chives, chopped red onion. Serve on green mixed salad.
