My favourite breakfast is βsuperstar oatmealβ cook one cup of oatmeal and add grated apple, fried bananas, peanut butter, green yogurt, a bit of honey and milk. Then sprinkle some granola on top! The best breakfast is one you look forward to the night before. π

I am also vegetarian and I have 2 go-to breakfasts I rotate between.
1. Overnight Oats: 2/3 cup rolled oats, 1 cup kefir (can substitute 2/3 cup oat milk for vegan), 1 tbsp slippery elm powder, 1 tbsp cacao powder, pinch sea salt. Mix dry ingredients first, then and liquid and mix thoroughly. Add in sweetener or extras if desired – I like to add a tbsp of cranberry sauce, jam or nut butter. Cover and refrigerate overnight.
2. Whole grain toast topped with mashed avocado, a sprinkle of sea salt or Trader Joe's Everything but the Bagel seasoning, and a drizzle of olive oil. For extra protein, top with an egg poached or over easy.
