Any suggestions for a good vegetarian breakfast/ brunch for the weekend?

Tofu fried, carrots and cucumbers sliced thin, avocado. Or as another option fried potatoes (rounds), with cut thin onions and carrots, many some sweet pepper and Italian herbs on a vegetable oil; sliced fresh cucumbers and salad on a side.
