I quit when I find a particular exercise or yoga asana too hard. How should I bee consistent and push myself harder?

I know how you feel, after an accident I had I lost a lot of muscle and struggled. I reminded myself that getting stronger is a marathon not a race. Especially in yoga you can adjust each asana to fit your current strength/flexibility. I follow Breathe and Flow on YouTube and they always give you different options and adjustments you can do for every pose to make it more challenging or less so.
