I make mine with two eggs, a tablespoon of cottage cheese (I don\u2019t like cottage cheese,  but it helps the texture), 1&#x2F;4 cup each saut\u00e9ed veggies and black beans, and some shredded cheese. You can easily also add shredded pork or another meat. Cook for a minute on high, stir, and then go in 30 second chunks until the eggs are as done as you\u2019d like. I will add shredded hashbrowns when I\u2019m not too busy. On the weekends, I make a bunch of oatmeal breakfast bars for the week with reduced sugar maple &amp; brown sugar oatmeal packs. 4 bars &#x3D; 2 packs of oatmeal, 1 mushed banana, 1 egg, 1&#x2F;4 cup milk, and 1&#x2F;3 cup self-rising flour. Then I add 1-2 cups of whatever frozen fruit I want: blueberries &amp; peach are my fave! Cook in mini loaf pans at 350 for 25 minutes. I\u2019ll make 16 bars at a time and freeze them all.
